Milk in scrambled eggs

Why do we add milk to scrambled eggs? I just do it because that's how I was taught to make them, but it occured to recently to wonder why?

I dont think my mother adds milk to hers, but hers taste alot better than mine

I don't like scrambled eggs, I like egg whites only fried....but Colin loves scrambled...so here's how i make his:

egg (obviously)

milk
butter
salt
pepper
honey

yes! It's awesome- he loves it. I put it in my eggs too

But you don't NEED to add milk, and when you do, the eggs get all fluffy, so I honestly think it's less about bonding (egg is always the ingredient used to bond things, i.e., meatloaf) than it is about fluffiness.


I'm a baker, not a cook, but I've made scrambled with and without milk, and it has a fluffier volume when milk is used, but the egg seems to stick to the egg just fine regardless of whether milk is used.

Yeah that. I never use milk. And the eggs have a healthier colour to them when you don't I think as well.

My mum always used milk though...I think she was just "taught" to do that too....!

I put just a enough butter in the pan to keep my egg from sticking and then I scramble the eggs up in a bowl while the butter melts, put just a little bit of milk and then scramble a bit more. And then I pour up my eggs in the pan and then I take a single slice of american cheese and tear it up and drop it into the eggs and a bit of salt and then keep stirring every so often until its all done. and My eggs are so good but when I first learned how they were awful.

Okay I feel silly posting that because it's really the fat in the milk that is doing the job. It helps make things fluffy. The best way to make them is to use real butter and cream. That's the way my Momma makes them.

I add a few tablespoons of water to eggs before I scramble them. It things out the egg and allows them to rise a bit more instead of being flat.

I also sprinkle a bit of onion power and garlic powder and lemon pepper on them as they cook.

Try two batches of eggs- one without milk and one with. You will easily see the difference. They are much fluffier with the milk whisked in. Add a bit of baking powder and that is also supposed to help- but I've never tried that. I know for a fact adding milk does- my mom never did growing up and neither did I. My husband used to be a cook for a restaurant and said that you need to add milk- so I tried it and he was totally right. It makes a big difference for fluffiness- if that is important to you!

but they do taste better to me with milk
