    I'm having the same problem... My cat is biting completely out of the blue, its getting worse - its not just unhappy biting, its becoming full-on mauling.  Currently when it happens, the only way to get him off is to scruff him, he then gets a time-out for 5-10 minutes.  Seriously, I do not know...
