So red is turning 1 year old next month. Are there any yearly things I should be planning for (rabies shots, etc)?
He seems to be in excellent health, which is great. I just want to be sure I don't forget to get him his 10,000-mile check-up!

Red is a bit of a sloppy eater, and his messy habits have brought sugar ants into the house. I'm getting tired of checking on his food bowl all day long to be sure he hasn't dropped any food.
Does anybody have any suggestions to how I can keep his food area clean?

Yeah. I've been doing that, as well. When I am petting him and he bites, I immediately stop and move my hand out of his line of sight and stop interacting with him at all. If that doesn't stop him, I push him off of my lap.
Red has really scratched up my hand lately with his biting. He doesn't even try to scratch me (it wouldn't work since I put softpaws on him anyway).
How do I discourage him from attacking my hand and arms all the time? My hand is starting to look like I've been punching rose bushes.
A cat is considered a kitten until it is 1 year old, so I would start the transition at around that point.
As for the amount, the bags generally give good guidelines for how much to feed. I think the amount is different depending on the type of food (calorie count, etc.)

I have considered investing in Soft Paws for Red. I know that it doesn't affect his daily scratching and stretching routines, but will it hinder his ability to climb? I just got him a new cat condo thing that he absolutely loves climbing on, but I'm afraid that with the Soft Paws he won't be...
On a whim, I went home for lunch and put down a bowl of the Royal Canin... no mixing with the old stuff. He dove in. I am a little worried how his tummy is going to take it, but I'm relieved to see him eating!
It seems that Red is getting bored with his Iams, so I mixed in a little Royal Canin today and he seemed to like that, but still did not eat much of the Iams. How do I go about phasing in a new food if he won't eat any of the old?
