Has anyone ever tried these? I've never even heard of such a thing!
http://chowtimes.com/2006/08/01/peanut-butter-cookies/ They look pretty good but it just seems so weird, making a cookie without flour, seems like they'd be super sweet from the sugar. I had a PB cookie from Tim Hortons the other day, soo good. Slightly crispy edges, reminded me of cookies when I was little. I think I'll continue my search for the perfect recipe ![]()

If you are going to do that, maybe you should try peanut butter balls - mix peanut butter with icing sugar until you get a consistancy you can mould into balls. Roll the balls in crushed peanuts, or coconut, dip in chocolate, get adventurous. no baking involved

Doesn't sound so good to me!
There is a revision lower down in that link where they tried rice krispies instead of some of the sugar and they say it tasted better. However, there are other alternatives to wheat flour. Rice flour is a good substitute.

One of my colleagues has an awesome recipe for these and it still suprises me that they have no flour.
I don't know exactly why it works, all I know is that they're one heck of a diet-killer when she brings them in to work. ![]()

I've been trying to make peanut butter cookies without eggs, but I can't seem to get them to hold together. I've tried my usual trick of replacing the eggs with unsweetened applesauce, and they taste great... but when I try to lift them off the cookie sheet, they dissolve! Anybody know the secret?

Hey, thanks, that recipe looks good! I guess it's the sugars that hold it together... which is probably part of my problem, because I'm trying to cook with Splenda blends, since I'm diabetic. Maybe I'll just have to go ahead and use sugar, but limit myself severely.
I guess one peanut butter cookie is better than NO peanut butter cookies. ![]()

Does anyone remember those peanut butter squares they used to serve in elementary school cafeteria? They were so yummy! I think they were made with peanut butter, butter, vanilla and sugar.
